When it comes to the cuisine itself, ingredients are everything! More importantly, is our emphasis on using quality ingredients and sourcing the best of Tasmania.

Our chicken is sourced from Marion Bay and enjoy a simple free-range living space, renowned as a Tasmanian delicacy. Pork is free range which aligns with our green environmental objectives.

Our beef is aged a minimum of 90 days, grass-fed in green pastures of Tasmania for juiciness and best known for its natural marbling and good flavour.

The lamb is sourced from the North of Tasmania which enjoys fertile and prosperous farming land.

Our king salmon comes from all-year harvesting in the Huon aquaculture in Hideaway Bay from sustainably raised fish and has the highest natural oil content of all salmon- a naturally rich source of healthy marine long-chain Omega-3s.

Most of our vegetable produce comes from the rich soils of Tasmania, reducing our carbon footprint.
